Epic Skor Cake Recipe

Cake and ice cream are a staple at birthday parties, family reunions, and many other celebrations. Everyone has their go-to favourite cakes, and there are so many great recipes out there, but some can be very time-consuming to create. Not the case with this epic Skor cake.

Today’s easy cake recipe starts with a box cake mix, like Betty Crocker or Duncan Hines, and comes together in no time. This delicious dessert makes an impressive centrepiece for any occasion and the flavour of the chocolate, combined with the crunchy bits of Skor bar, can’t be beat.

It’s one of the most requested birthday cakes around here!

We love Skor Bars!

Produced by the Hershey company, and originally developed to compete with Heath candy bars, Skor is a crunchy bar of toffee covered in a thin layer of milk chocolate. These two English toffee bars are very similar, so if Skor candy bars aren’t available in your area, feel free to substitute a Heath bar instead.

Supplies:

Ingredients:

  • 1 pkg chocolate cake mix (prepared and baked in two 8″ rounds)**
  • 1 litre whipping cream
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup white sugar
  • 4 Skor bars, crushed (1/4 cup reserved)

**plus ingredients to make cake. This usually requires an egg or two and vegetable oil.

How to make Skor Cake:

Directions:

1. Bake cake according to the package directions.

2. Let the cake cool before cutting each of the two rounds in half with a long serrated knife.

3. Combine whipping cream, sugar and cocoa in a stand mixer with whisk attachment. Or use a large bowl with a hand mixer.

4. Whip ingredients until they are well incorporated and stiff peaks form.

5. Crush the skor bars either in their packaging or place them in a freezer bag and smash the bars with a rolling pin.

6. Fold the crushed Skor bars into the whipped cream mixture (reserve 1/2 bar).

Now build your skor cake of epic proportions. 

7. Place one cake round on a sturdy plate or tray, layer with about 1/6 of the whipped cream, repeat with the other layers of cake. 

8. A long dowel or skewer may be inserted into the layered cakes to prevent them from sliding if need be.

9. Cover the entire cake with the remaining whipping cream. 

10. Sprinkle reserved Skor bar on top of cake. 

11. Slice into wedges and serve.

Tips and tricks:

  • I like the simplicity of a mix, but feel free to make a homemade cake if you prefer that.
  • To make things even easier, you can buy a bag of toffee chips. These can usually be found with the chocolate chips at your local grocery store.
  • If the cake is going to be sitting at room temperature for quite a while, using a container of Cool Whip to make the icing will provide it with extra staying power.

Other variations:

  • Whipped topping can be used in place of heavy cream. Just leave out the extra sugar.
  • For even more toffee flavour, use brown sugar instead of white.
  • Try different combinations of boxed cake mix and chocolate bars.
  • Everyone gets their very own cake (or two) when you make cupcakes! You can even fill the centres with Skor bar pieces.
  • Turn this layer cake into a poke cake. Prepare the box chocolate cake mix according to the box instructions and bake in a 9×13 pan. Cool slightly. Using the handle of a wooden spoon, poke lots of holes in the cake. Pour a whole can of sweetened condensed milk evenly over the cake, filling the holes. You could also use chocolate syrup. After letting the cake rest in the fridge for about an hour, spread on the chocolate whipped cream mixture and sprinkle extra Skor candy pieces on top of the cake.

My mom makes a cake like this but without the skor. Then she mixes Jiffy fudge frosting mix with corn syrup and pours it over the top. It’s divine! I am going to add skor next time I make it! I LOVE Skor!

I am gaining weight just looking at your pictures LOLOL. This looks so yummy…along with the white trash bars. I’ve died and gone to toffee heaven lol.

Have you actually made successful icing following that recipe? I followed yours to a T and it did not making icing, it made soup. I had to use an entire bag of icing sugar to make it somewhat resemble real icing and even now it hardly does. Thanks.

This cake does not use icing or frosting. The recipe makes a chocolate whipping cream of epic proportions. Use the whipping cream to layer and cover the cake. Perhaps you did not mix the cream for long enough? It should thicken and form peaks. Hope it works for you next time! xo
