Healthy Eating Ideas and Recipes for the New Year

Eating healthy can sometimes be a struggle.  
 
We lead busy, active lives and don’t always put our health and what we are eating on the top of the priority list.  I am the first one to admit to being guilty of this.  When I made the conscious decision to start eating healthier back in November, I knew that I had to make it a priority for me and my family.  That first day it took me over two hours just to divide, organize, chop and prepare snacks for the week.  A bag of chips takes five seconds to open.  Just sayin’.  
 
I have since lost almost ten pounds and have been documenting my journey on Instagram, Facebook and My Fitness Pal.  Social networking and sharing these healthy ideas has been instrumental to my success.  It has made me be more accountable and allowed my friends and relatives to cheer me on.  So join me!

Below are instagram photos of some of the meals and snacks that I have been eating.
I have calculated calories for each of them using My Fitness Pal.  I can eat up to 1300 calories a day depending on my activity level.  The calories for these meals may differ for you, depending on which brands of food you use and your portion sizes.  I often find it hard to come up with new meal ideas and can become bored pretty quickly.  So I hope that you find this post helpful in at least keeping you motivated and inspired to eat healthy.
 Greek Chicken Wrap 350 calories
Tortilla, chicken, tzatziki, feta cheese, cucumber and pepper
 BBQ Chicken Mini Pizzas 300 calories
Thin buns, barbecue sauce, chicken, pepper, mushrooms, cheddar cheese
 Spinach Salad 250 calories
Spinach, diced pepper, mixed nuts, turkey bacon, ranch dressing

Half  McCain Pizza 300 calories 
Love these pizzas!  Walmart had them on sale for less than $3 ~ score!
 Half Ham Sandwich and Garden Salad 275 calories
Whole wheat bun, ham, mustard, lettuce, tomato, cucumbers, raspberry vinaigrette
Mixed Nuts and Greek Yogurt 200 calories
Spinach Smoothie 120 calories
Pineapple, apple, spinach, water, Greens vitamin mix
 California Rolls 300 calories
 Brunch 580 calories
Turkey bacon, one egg, whole wheat toast, hashbrowns ~ breakfast is my guilty pleasure 😉
 Stuffed Pepper 350 calories
Brown rice, tomato sauce, chicken, pepper, cheddar cheese
 Greek Chicken Wrap v.2 350 calories
Sun dried tomato chicken, tzatziki, lettuce, diced vegetable, feta cheese ~ SO GOOD!!
 Homemade Spaghetti 415 calories
with whole wheat pasta and light Parmesan cheese
 Greek Rice 300 calories
Brown rice, tzatziki, diced cucumber, diced peppers
 Half Pizza Quesadilla with Vegetables 380 calories
Tortilla, tomato sauce, pepper, cheese, pepperoni
 Berries and Potato Soup 195 calories
I use Johnny’s Potato and Cheddar soup mix, from Costco, as a base {160 calories} and add vegetables.
 Sun Dried Tomato Chicken and Tossed Salad 250 calories
Marinated chicken, lettuce, Parmesan cheese, sunflower seeds, light ranch dressing
 Cracker Chips ~ 1/2 the calories of Baked Lays and pretty good.
 Butter Chicken Mini Pizzas 300 calories
Chicken, butter chicken sauce, onion, red pepper, light mozzarella cheese, thin buns {the kind they make now for hamburgers}
 Wasa Crackers and Peanut Butter 170 calories
 Creamy Greek Salad 150 calories
Diced vegetables, Kraft Greek dressing, tzatziki, feta cheese
 Veggie melt {my favorite} 350 calories
Brown bun, light mayonnaise, tomato, onion, pepper, light cheddar cheese ~ melted under the broiler.
 Beef and Broccoli 465 calories
 Greek Chicken Lettuce Wrap 150 calories
Iceberg lettuce, chicken with Greek seasoning, cucumber, ranch dressing
 Roasted Vegetable and Goat Cheese Pizza 280 calories
McCain thin crust pizza
 Creamy Vegetable Soup, Wasa Crackers and Light Laughing Cow Cheese 295 calories
Chicken Ranch Mini Pizza 370 calories
Thin buns, ranch dressing, chicken, diced pepper, light mozzarella cheese
Homemade Cream of Broccoli Soup with Herb Bread 440 calories

    Ever since you posted your greek chicken salad recipe I’ve been thinking I’ve got to email you for the recipe- these all look awesome! You are inspiring! I’d love to know how you make or where you buy your tzatzaki and butter chicken sauce 🙂 Congrats on losing, Heather- you make healthy eating look good!
