This is one of those effortlessly healthy recipes that you need to stop what you are doing and write down.  Or pin.  Or print.  Or just stare at your screen and drool over… your choice really *wink*.  But seriously ya’ll know that we have been eating way healthier around here (you might want to join the real-time fun on Instagram) and this Mint Chocolate Chip Banana Ice Cream has become my go to “treat”.  The mint helps to disguise the banana flavour while the mini chocolate chips add a pop of chocolate goodness to every bite.

You only need four ingredients with the option of a fifth.  Frozen bananas, coconut milk, mint extract, mini chocolate chips and green food coloring.  I always have ripe bananas in the freezer.  I simply peel them when they become too ripe to eat and toss them into a reuseable and resealable ziploc bag in the freezer.  You could use any kind of chocolate you want.  If you are on a more restrictive diet try coarsely chopping dark chocolate to use.  Divine.  And the green food coloring is a psychological thing for me.  You totally don’t need it but when this ice cream is green like traditional mint ice cream my brain says “dude, this IS mint ice cream!”  Why I talk like a surfer in my head… I have no idea.  Anyway I am slowly working on changing those habits but until then GREEN it is!  AND this would totally be fun for St Patrick’s Day no?!

Toss the frozen bananas in a food processor (or high-powered blender) and blend until smooth and creamy.  If you are having trouble getting a smooth texture add some coconut milk (or milk) to the mixture.

Drop in the mint extract and food colouring (if desired).  Add the chocolate last and quickly pulse the mixture to blend but not cut up all of your lovely chocolate chips.  Serve immediately and/or store in the freezer.

  • 3-4 large frozen bananas
  • 2-3 Tbsp coconut milk (if required)
  • ½ tsp mint extract
  • ⅛ cup mini chocolate chips
  • 4 drop green food coloring (optional)
  1. Blend the bananas and milk in a food processor until smooth.
  2. Add extract and food coloring, mix well.
  3. Drop in chocolate chips and pulse until just incorporated.
  4. Serve immediately and store in the freezer.
