Creamy Kale, Mushroom & Turkey Meatball Soup

The winter months make me crave comfort foods.  Casseroles, soups and hearty stews are often a big part of my meal planning this time of the year.  Cream of mushroom soup is one of my all time favorites and recently I have been on a quest to make a low carb version with added protein.  Well, today I am sharing the winning recipe with you!  This Creamy Kale, Mushroom and Turkey Meatball soup will satisfy all of your cravings for traditional cream of mushroom soup…

This dish is not only delicious but also perfect for those of us following a low carb, ketogenic lifestyle.  Packed with lean protein and low carb, this soup fits perfectly within my daily macros.

With a bit of preparation this soup can easily become a new addition to your menu planning.  Whenever I buy ground turkey from Costco I immediately make a batch of turkey meatballs.  They are so easy to make and provide such a great source of lean protein!  I love knowing exactly what ingredients are going into my meals.  My Low Carb Turkey Meatball recipe is easy to follow and make.  I often allow the meatballs to cool before storing them in the freezer for later use.  Then when I want to make this soup I already have the meatballs ready to use.

Ingredients:

1 pound ground turkey (made into these low carb turkey meatballs)

150 g mushrooms, diced

1 1/2 cups cream

3 cups chicken broth

50 g kale, chopped

1/2 tsp salt

1/2 tsp pepper

Directions:

Make small meatballs using this low carb turkey meatball recipe.

In a medium stock pot saute mushrooms in 1/2 cup chicken broth until tender.

Add remaining ingredients to pot and simmer for 15 minutes.

Serves 4.

The combination of mushrooms and cream is always a good one in my books.  Adding kale and turkey meatballs to this soup makes it a truly hearty addition to our menu.
