Dehydrated Fruit Trail Mix

This year I am determined to pack healthier snacks for when we go camping.  We often get stuck with chips and sunflower seeds which are not high on my “healthy eating” list.  Fresh fruit often becomes bruised or spoiled when we pack it into our camper and coolers.  So this spring I have decided to bust out the good old food dehydrator {please tell me that I am not the only one that still has one of these} and create our very own, super nutritious, Dehydrated Fruit Trail Mix.

We used our food dehydrator a lot when the boys were little but it has been gathering dust for a while now.  I forgot how great these things are.  You can dehydrate almost anything!  I chose to slice up the ripe fruit that we already had at home.  Here we have apples, bananas and mangoes.  If you haven’t tried dried mangoes you are truly missing out!!  They are our favorite!  Most dehydrators come with instructions but basically you cut the fruit 1/4″ thick and lay it out evenly on the trays.  Turn the dehydrator on to about 165 degrees.  Mine has a fruit setting that I simply switch it to.  Allow the fruit to cook for 4-8 hours depending on how dry you want it to be.  I like to rotate my trays 3 or 4 times throughout the day to allow for it to all dry evenly.

To prevent the fruit from browning too much you can rinse it in lemon or orange juice before drying.

Once the fruit is dry you could mix it with pumpkin seeds, almonds, cashews, dried cranberries, a few chocolate chips, shredded coconut, dried ginger… really the possibilities are endless!  I portioned out our mix into these jars to pack and store for our next camping trip.

With this simple dehydrated fruit trail mix I feel like we still have our “snacks” for camping just a much healthier version of them.
