Hearty Borscht Soup Recipe

Serves: 6 servings
- 5 celery stalks, diced
- 6 medium carrots, peeled and diced
- 1 onion, diced
- ½ red cabbage, diced
- 5 small beets, peeled and diced
- 28 oz can diced tomatoes
- 1pkg Johnny's Potato Soup Mix (optional)
- 3 Tbsp parsley
- 3 Tbsp dill
- 2 tsp garlic
- 8 cups chicken stock
- Combine all ingredients in a large stock pot.
- Add the soup mix if desired, it as a creamy texture to the recipe.
- Cook on medium for 40 minutes until well combined and all ingredients are well done.
- Serve with a dollop of sour cream.
