Eating healthy can sometimes be a struggle.
We lead busy, active lives and don’t always put our health and what we are eating on the top of the priority list. I am the first one to admit to being guilty of this. When I made the conscious decision to start eating healthier back in November, I knew that I had to make it a priority for me and my family. That first day it took me over two hours just to divide, organize, chop and prepare snacks for the week. A bag of chips takes five seconds to open. Just sayin’.
I have since lost almost ten pounds and have been documenting my journey on Instagram, Facebook and My Fitness Pal. Social networking and sharing these healthy ideas has been instrumental to my success. It has made me be more accountable and allowed my friends and relatives to cheer me on. So join me!

I have calculated calories for each of them using My Fitness Pal. I can eat up to 1300 calories a day depending on my activity level. The calories for these meals may differ for you, depending on which brands of food you use and your portion sizes. I often find it hard to come up with new meal ideas and can become bored pretty quickly. So I hope that you find this post helpful in at least keeping you motivated and inspired to eat healthy.

I use Johnny’s Potato and Cheddar soup mix, from Costco, as a base {160 calories} and add vegetables.

Marinated chicken, lettuce, Parmesan cheese, sunflower seeds, light ranch dressing
Cracker Chips ~ 1/2 the calories of Baked Lays and pretty good.
Butter Chicken Mini Pizzas 300 calories
Chicken, butter chicken sauce, onion, red pepper, light mozzarella cheese, thin buns {the kind they make now for hamburgers}
