Jambalaya Recipe

WOW! Talk about goooood! As mentioned in my earlier post my stove is on the fritz!!! It’s a BIG deal! I bake something almost everyday…. I’m lost without Stanley! LOL Thankfully our repair man got the stove top going and this is what I came up with:

Jambalaya Recipe

3 Chicken breasts (cubed)
450g pkg Italian sausage meat (I used mild for the boys but you could
definitely get a little spicy!)
1 T Olive oil
3-4 Garlic cloves (minced)
1 Onion (diced)
2 Bell peppers (diced – I used red and orange)
8-10 White mushrooms (quartered)
1-2 t Chilli seasoning
3 Cups (approx.) of cooked white rice
10oz can Tomato soup
Saute chicken and sausage in a skillet (with olive oil) on medium-high until cooked through. Add garlic, onions, mushrooms and peppers. Cook until onion is opaque. Add chilli seasoning, rice and tomato soup. Mix well. Serve.
My kids LOVED this! (Even the vegetables!)
