Keto Chocolate Chip Cookie Recipe

Hello, hello friends.  I am so excited to share this Keto Chocolate Chip Cookie recipe with you today!!  This is my absolute favorite gluten free, sugar free chocolate chip cookie.  I love the moist, brownie-like texture that these cookies have and love how low carb they are per serving!

Don’t these Keto Chocolate Chip Cookies look delicious?!  I promise you that they are!  They remind me a little bit of a cross between these Almond Flour Chocolate Chip Cookies and a cookie dough fat bomb.  Yummy!!

Ingredients:

3/4 cup almond flour

125 grams cream cheese, room temperature

1 Tbsp Stevia, granulated

1 tsp vanilla extract

1 tsp baking powder

1 egg

1/4 cup Lily’s sugar free dark chocolate chips

Makes 14.

Directions:

In a food processor mix dry ingredients.

Add egg, extract and cheese.

Combine until a soft dough forms.

Use a small cookie scoop to place walnut size balls of dough onto a parchment lined baking sheet.

Bake for 12 mins at 350.

These will not rise so the shape that you place on the cookie sheet is the shape that will come out of your oven.  Bake longer for a firmer cookie and shorter for a softer cookie.  I often pair these with a decaf latte in the evening for a sweet bedtime low carb treat.
