Dark Chocolate Almond Bars

My favorite kind of baking recipe is one that is super easy to make but looks absolutely divine.  You know, the kind where friends think you must have slaved away in the kitchen for HOURS!  These Dark Chocolate Almond Bars are one of those recipes.  They look and taste amazing but are simple to make.  Bonus points for this recipe being keto compliant and low carb!

I often talk about photos speaking for themselves… I mean, seriously!  This Keto Dark Chocolate Almond Bar recipe speaks for itself.  I wish that you could just reach through the screen and try one.  Alas, you will just have to take the few minutes to whip up a batch yourself my friends!  Totally worth it, I promise!

This recipe combines just a few of my favorite keto ingredients.  Almonds, heavy cream and Lily’s dark chocolate chips.

Directions:

  • In a food processor mix the first five ingredients until butter is evenly crumbled and distributed.
  • Press mixture into a 7×11″ or 9×9″ baking dish.
  • Bake for 10 mins at 350.
  • In a medium sauce pan melt butter, add powdered Swerve and mix well.
  • Remove from heat and add cocoa, extract and heavy cream.
  • Whisk eggs into the mixture until well combined.
  • Pour mixture over the crust and sprinkle almonds and chocolate chips overtop.
  • Bake for 20 mins at 350.
  • Allow the pan to completely cool before cutting into bars.

Bake the crust first.

Top with filling.

Bake again.  Be sure to allow the pan to completely cool before cutting into bars.  I even go so far as to place it in the fridge or freezer for 10-15 minutes before cutting.  This tip gives me crisp lines when cutting into bars every time.  Otherwise you may end up with a crumbled mess…. delicious but crumbly nonetheless.

Ingredients

  • 1 cup almond flour
  • 1/4 cup butter, chilled
  • 1/4 cup Swerve, granulated
  • 1/4 cup cocoa, unsweetened
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1/2 cup Swerve, powdered
  • 1/4 cup cocoa, unsweetened
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1/2 cup heavy cream
  • 2 eggs
  • 1/4 tsp salt
  • 1 cup sliced almonds
  • 1/2 cup Lily’s sugar-free dark chocolate chips
