What is jambalaya?

A traditional jambalaya recipe is a one pot rice dish, full of meat, veggies, and a lot of flavour. There are two main variations of jambalaya.

A creole jambalaya uses tomatoes in the dish. The cajun version leaves tomatoes out.

Today’s recipe draws from the classic creole dish by including tomato paste. Unlike a more authentic jambalaya recipe, however, my low carb version is rice-free, making it a perfect addition to any keto diet.

I love the combination of flavours in this dish.  The shrimp, sausage, vegetables and cajun spices just seems to work together beautifully.  I pair this with cauliflower rice for a super low carb version of the more traditional jambalaya.  You can totally serve this over white rice if that is your preference though.

Keto jambalaya recipe:

Ingredients:

  • 1/2 lb ground turkey (ground beef or sausage can be substituted)
  • 1 lb andouille sausage or chorizo
  • 15 (about 100g) peeled shrimp
  • 1 cup (200g) zucchini, sliced and quartered
  • 1/2 cup (100g) white mushrooms, sliced
  • 1 cup tomato sauce
  • 1 cup chicken broth
  • 2 cups cauliflower rice
  • 1 tsp chilli lime seasoning 
  • 1 tsp taco seasoning
  • 1/4 tsp red pepper flakes
  • 1 green onion stalk, chopped (reserve for garnishing)

Directions:

1. In a large frying pan or stock pot, brown ground turkey.

2. Add shrimp and cook on medium-high heat until opaque.

3. Add sausage, zucchini and mushrooms.

4. Continue to cook on medium heat until just tender (about five minutes).

5. Add remaining ingredients, stir together and cook until heated through.

6. Top with green onions and serve.

This recipe has 4 net carbs per serving.

Tips & tricks:

  • If your ground meat is very lean, you may want to add a touch of olive oil to the pan.
  • Any dish that includes rice is going to have a high carb count. Using riced cauliflower as a substitute keeps this recipe keto-friendly and is a great way to support a low carb diet. You can usually find cauliflower rice in the produce section of your local grocery store.
  • Leave out the shrimp if any of your family members experience adverse reactions to seafood.
  • Store leftovers in an airtight container in the fridge. The next day, all those delicious flavours will taste even better!
  • It’s always a good idea to get professional medical advice before starting a ketogenic diet.

Ingredient substitutions:

  • If you aren’t concerned about keeping it keto, you can use regular white rice in place of the cauliflower rice.
  • Tomato paste, combined with water or extra chicken stock to thin it out, can be substituted for tomato sauce. Keep the total quantity the same.
  • Want to include more veggies? Try green pepper or green beans.
  • Instead of chilli lime and taco seasoning, use a cajun seasoning blend, creole seasoning, or italian seasoning. You can even make your own homemade cajun seasoning with spices you already have in your cupboard.
  • Including extra hot sauce or cayenne pepper will provide an added kick.
  • Cut up some skinless chicken breasts or chicken thighs to replace the ground meat.

Ingredients
 

  • 1/2 lb ground turkey ground beef or sausage can be substituted
  • 1 large link 400 g mennonite sausage, sliced and halved
  • 15 about 100g peeled shrimp
  • 1 cup 200g zucchini, sliced and quartered
  • 1/2 cup 100g white mushrooms, sliced
  • 1 cup pasta sauce
  • 2 cups cauliflower rice
  • 1 tsp chilli lime seasoning
  • 1 tsp taco seasoning
  • 1/4 tsp red pepper flakes
  • 1 green onion stalk chopped (reserve for garnishing)

Instructions

  • In a large frying pan, brown ground turkey.
  • Add shrimp and cook on medium until opaque.
  • Add sausage, zucchini and mushrooms.
