Loaded Campfire Cauliflower Camping Recipe

I have been waiting for months to share this recipe with you!  Last summer this Loaded Campfire Cauliflower was a staple in our camping meals.  By the time I got a chance to photograph it for the blog, winter had set in so I’ve been saving it until now!  So, TA DA!!  Here it is, one of my absolute favorite camping recipes that you are sure to LOVE…

I love camping meals that are easy to prepare and make ahead of time and this one is no exception.  Perfect for preparing and then packing on your next trip.

Have I mentioned how delicious this Loaded Campfire Cauliflower is yet?!  So good!

Following a ketogenic lifestyle, I have modified many of my favorite recipes to be low carb.  By simply swapping cauliflower for potatoes in this Loaded Campfire Potatoes recipe I have created a yummy keto meal that is perfect for camping.  Not a fan of cauliflower?  Try subbing diced celery root or  jicama (both low carb).  Just be sure to boil them before cooking over the campfire or bar-b-cue.  I like to steam the cauliflower first at home before preparing and packaging this recipe for camping.  It’s not necessary but it makes cooking time faster in the long run.

Tips for making Camping Freezer Meals:

  • Use 1 gallon, large freezer bags.  Label bags with the date, recipe and cooking instructions
  • Lay ingredients flat in the bag for easier storage in the freezer.
  • Defrost meals in the refrigerator and place into tinfoil packet for cooking or dump onto a skillet.
  • Store meals for up to three months in the freezer.

Loaded Campfire Cauliflower Camping Recipe

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 1 head of cauliflower, steamed aldente and diced
  • 1 cup shredded cheddar cheese
  • 2 Tbsp bacon bits
  • 2 stalks diced green onion
  • 2 tsp butter
  • salt and pepper
  • sour cream (optional)

Instructions


  1. Cook cauliflower until al dente (do not over cook), chop
  2. Place cauliflower, cheese, bacon and butter into a large freezer safe plastic bag.
  3. Freeze until ready to use.
  4. When ready to cook, defrost and empty contents into a tin foil packet.
  5. Wrap securely with foil and place onto the cooking surface.
  6. Cook for 30-40 minutes on medium heat.
  7. Top with green onion, sour cream and s&p.
