I have been waiting for months to share this recipe with you! Last summer this Loaded Campfire Cauliflower recipe was a staple in our camping meals. By the time I got a chance to photograph it for the blog, winter had set in so I’ve been saving it until now! So, TA DA!! Here it is, one of my absolute favorite camping recipes that you are sure to LOVE…
I love camping meals that are easy to prepare and make ahead of time and this one is no exception. Perfect for preparing and then packing on your next trip.

Tips for camping meal preparation:
- Prepare meals in advance at home whenever possible. Leave most of the mess at home where running water is more accessible and clean up is easier. Trust me on this one!
- Create “one pot” family style meals for quick dinners that don’t require a lot of thought.
- Use tinfoil packets, foil pie pans or camp cookers (aff link). These tools help to make clean up a breeze!
- Pack ingredients in 1 gallon size ziploc bags for flexible storage in small fridges and coolers.
- Plan meals that use similar ingredients to help make packing and planning easy. These Cheesy Vegetable Campfire Dip, Loaded Campfire Potatoes and Tinfoil Packet Nacho Dip recipes are some of my favorites.
Following a ketogenic lifestyle, I have modified many of my favorite recipes to be low carb. By simply swapping cauliflower for potatoes in this Loaded Campfire Potatoes recipe I have created a yummy keto meal that is perfect for camping. Not a fan of cauliflower? Try subbing diced celery root or jicama (both low carb). Just be sure to boil them before cooking over the campfire or bar-b-cue. I like to steam the cauliflower first at home before preparing and packaging this recipe for camping. It’s not necessary but it makes cooking time faster in the long run.
Tips for making Camping Freezer Meals:
- Use 1 gallon, large freezer bags (aff link). Label bags with the date, recipe and cooking instructions
- Lay ingredients flat in the bag for easier storage in the freezer.
- Defrost meals in the refrigerator and place into tinfoil packet for cooking or dump onto a skillet.
- Store meals for up to three months in the freezer.
How to make this loaded campfire cauliflower:
- Cook cauliflower until al dente (do not over cook), chop
- Place cauliflower, cheese, bacon and butter into a large freezer safe plastic bag.
- Freeze until ready to use.
- When ready to cook, defrost and empty contents into a tin foil packet.
- Wrap securely with foil and place onto the cooking surface.
- Cook for 30-40 minutes on medium heat.
- Top with green onion, sour cream and s&p.
