Low Carb Hamburger Soup is always a crowd pleaser around here!  This is a recipe that I will often double and triple when meal planning.  I will serve some on the day of cooking and freeze the rest in small batches to use later. 

I love having home made meals ready in the freezer for easy week night dinners.  This Low Carb Hamburger Soup is absolutely delicious and full of flavour!

Low Carb Hamburger Soup

This recipe is perfect for those who may be following a ketogenic lifestyle because it is low carb, gluten free and sugar free. Swapping out the more traditional rice or barley for riced cauliflower makes this Low Carb Hamburger Soup recipe a winner for everyone.

How to make this low carb hamburger soup:

  • In a medium frying pan, cook beef.
  • Dice vegetables.
  • Add all ingredients to a large stock pot and bring to a boil.
  • Simmer for 30 minutes.
  • Reduce temperature to low and cook for an additional 30 minutes.

I love to use this riced cauliflower from Green Giant but fresh cauliflower that has been riced in a food processor would be a great alternative.

This soup is especially good with my 90 second keto mug bread recipe!  Or try my Foccaccia Mug Bread recipe, it’s my absolute favorite for dipping in soup or chilli.  I sometimes like to add 1/2 tsp of garlic salt to our bread to give it a garlic toast flavour.

Tips for keto cooking:

This yummy low carb hamburger soup is a crowd pleaser and a hit with the whole family! It's perfect for those following a keto lifestyle.

Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 2 carrot stalks, diced
  • 2 celery stalks, diced
  • 14 oz can diced tomatoes
  • 5 cups beef stock
  • 2 Tbsp sugar-free ketchup
  • 1 Tbsp mustard
  • 1 bay leaf
  • 1 tsp fresh parsley, chopped
  • 1/2 tsp thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup riced cauliflower

Instructions

    1. In a medium frying pan, cook beef.
