Potato Chip Casserole

This was one of Darcy’s favorite meals when growing up.  What kid wouldn’t like chips for supper?  
It is actually tuna casserole with a twist.  I have combined my mother-in-law’s recipe with my moms recipe {waiting for the world to implode}.

It’s got rave reviews from the whole family so here it is…

The goods:
1 pkg egg noodles
2 cans of tuna
2 cans of cream of mushroom soup
1 can of sliced mushrooms
1/2 medium onion, diced
1 celery stalk, diced
3/4 cup cheddar cheese, grated
1/2 cup milk or cream
1 cup crushed potato chips

Saute the onion, celery and mushrooms until onion is opaque.

Cook noodles until tender.

In a 9×11 casserole dish layer 1/2 noodles, 1/2 tuna, 1 can of soup, vegetables and 1/2 the cheese.  Then add the rest of the noodles, tuna, soup and cheese.  Pour milk over top.  Top with potato chips.

Bake at 350° for 20-30 minutes until warmed through and melted.
