When creating our weekly salads in a jar we simply toss ingredients in our jars without measuring really. So I am going to do my best to guess how much of each ingredient went into this salad. You can add or take away ingredients as you wish. I ate this with creamy greek dressing but you can simply add your favorite salad dressing. Many of the girls added a variesty of nuts to this for a delicious hint of sweet and salty. These salads travel well and are perfect for meal prepping lunches on the go.
- ¼ cup cooked orzo
- ¼ cup diced cucumber
- 2 Tbsp shredded carrot
- 2 sliced mushrooms
- 2 cups spring mix or spinach
- 1 Tbsp feta
- 2-3 sliced strawberries
- 1 Tbsp sliced almonds
- Prepare all ingredients and layer in a 1 Quart mason jar.
- Toss and serve with dressing.
