Tin Foil Packet Root Vegetables

It’s no secret that we spend a good majority of the summer either camping or out on the deck bar-b-cuing.  So when it comes to cooking meals we tend to wrap A LOT of things in tin foil to create easy tin foil packet meals.  These Root Vegetables are simply delicious, easy to make and a great addition to any outdoor meal!

We simply chop and add our favorite root vegetables together, wrap in foil and cook over the camp fire or on the BBQ.  I usually add fresh beets to our mixture but didn’t have any when I decided to take photos to share this post with you.  So just imagine this yummy side with a lot more color m’kay?!

Tin Foil Packet Root Vegetables

Yield: 4-6 servings
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

Ingredients

  • 1/2 cup chopped carrots
  • 1/2 cup chopped sweet potato
  • 1/2 cup chopped beets
  • 1/2 cup white potatoes
  • 1/2 cup white onions
  • 3-4 Tbsp butter
  • salt & pepper

Instructions

  1. Combine ingredients in a medium sized bowl.
  2. Toss with butter and s&p.
  3. Wrap in tin foil.
  4. Cook on medium heat for 45 mins or until fork tender.
