To Market, To Market ~ Grilled Vegetables

Now that the warmer weather is here, we’ve been trying to utilize our barbecue as much as possible.
And with fresh, organic produce from our local Farmer’s Market, it doesn’t get much better than this!
I scored some asparagus {$3} and sweet carrots {$2.50} at the market.  There was all sorts of great, local produce there already!  Spinach, lettuce, kale, rhubarb, onions and radishes to name a few.
I bend the asparagus until the ends break off.  I toss out the woody end and just use the tops.  I also cut the carrots into smaller strips.
Then I layered the tinfoil {shiny side in, to trap the heat} and placed my veggies on top.
I topped the fresh vegetables with about 4 Tbsp of margarine and lots of salt and pepper.
Then we threw them on the grill for about 20 minutes.
Simply amazing!  Especially when paired with this Turkey Bacon Grilled Chicken.

Holy YUM batman!
