Valentine’s Day Cupcakes with Marshmallow Fluff Filling


Little cupcakes are the perfect, last minute Valentine’s Day treat.
I love making mini cupcakes to share at school and special occasions.  

The minis are bite size and a little cupcake batter goes a long way.


These cupcakes are examples from my Cupcake Creations class last week.  

I like to share different recipes and decorating techniques with participants during each class.
For this class we filled chocolate cupcakes with marshmallow fluff filling.  They taste just as amazing as it sounds…


 The filling recipe:

7 oz tub of marshmallow fluff {found with the ice cream toppings}
1/2 cup shortening
1/3 cup icing sugar {powdered sugar}
1/2 tsp vanilla
2 tsp hot water
1/4 tsp salt

Dissolve salt in hot water.  Combine and mix all ingredients.  Scoop into an icing bag with a long, circular icing tip.  Insert tip into the cupcake and squeeze filling into the cupcake.  About 1 tsp of filling for mini cupcakes and 1 tbsp for large cupcakes.  Watch for the top of the cupcake to puff up slightly when full.  Overfilling will cause the cupcake to crack.  Frost the cupcake as usual.
