Zucchini Bread Test Kitch Yummers!

Zucchini Bread Test Kitch My zucchini… can you believe that these were 50 cents each at our local farmers market?!?!? I know!!! I look at my zucchini plants in the backyard ~ sigh ~ at the rate they’re growing {and yellowing, then falling off} they’re never going to produce anything close to these!

Zucchini Bread Test Kitch The goods:
3 eggs
1 1/2c white sugar
1c vegetable oil
2t vanilla
2c shredded zucchini {with peel}
3c flour
1t baking powder
1t baking soda
1t salt
1 1/2t cinnamon
1/2t nutmeg

Zucchini Bread Test Kitch Combine all ingredients…. your batter will look something like this… {maybe not as orange, my eggs were freakishly dark}

Zucchini Bread Test Kitch I bagged up my leftover zucchini {cause they were HUGE} into pre-portioned bags and froze for next time.

Zucchini Bread Test Kitch Mmmm can’t go wrong with a mini muffin pan!

Zucchini Bread Test Kitch My loaf… oh which I baked at 350 degrees F for 50-60 mins. The minis were in the oven for about 15 mins.
